Kochere’s August Coffee of the Month: A Honduran Honey-Processed Single Origin

That’s this month’s stop on the Safari “Coffee of the Month” Club, built around a simple idea — every subscriber gets a passport stamp for their kitchen counter. A new single-origin destination arrives each month, roasted to order and shipped within one to two days, so it reaches subscribers close to peak freshness rather than sitting on a shelf. This August, the destination is La Paz, Honduras.

The coffee comes from Finca Liquidambar, grown by Roberto Rene Gonzalez in Guascotoro, San Jose, La Paz, at 1,510 meters above sea level in clay-mineral soil. The farm grows Bourbon, Catuai and Pacas — Pacas is a variety native to Honduras, first identified there in the 1930s as a natural mutation of Bourbon, which makes this lot as much a piece of local coffee history as it is a specialty-grade cup.

This lot is processed using the honey method — cherries are pulped, then dried with some of the fruit’s mucilage left on the parchment, inside solar dryers that protect the beans from rain while still allowing a slow, controlled dry. Honey processing sits between washed and natural: more sweetness and body than a washed coffee, more clarity than a natural. It’s the kind of cup that rewards slowing down for. The result is Organic certified, scored 80-plus by Q Graders, and roasted medium, with cupping notes of brown sugar, nectarine, peach and toasted coconut.

Kochere was founded in 2022 by a team with virtually no formal experience in specialty coffee — just a conviction that direct relationships with smallholder farms and cooperatives, and coffee roasted to order instead of pulled from a warehouse shelf, made for a better cup. The Safari Club grew out of that same instinct: rather than pick one blend and stick with it, ship subscribers somewhere new every month.
